Visitors to the small but growing former plantation town of Pahoa have been pleasantly surprised to stumble on the Tin Shack Bakery, an enterprise run by Matt Purvis to “provide a gathering space, jobs, and good food."
Matt started selling at farmer’s markets in 2008 but graduated his sweet and savory talents to this bright little spot to which locals have gotten quite attached. The funky metal building was once a tire shop, but the bakery name actually came from a small and rustic "tin shack" where the Purvises once lived and started their business and family.
Check out his widely praised long-rise sourdough breads, scones, rolls, and dessert breads in the stuffed bakery case. Creative soups and salads are made fresh so check the board daily, and end your meal with vegan gelato! There are vegetarian and vegan options.
Hours: Monday-Saturday; 6 a.m. to 3 p.m. (kitchen opens at 7 a.m.). Closed Sunday.
